It will soon be the season of hearts and flowers and special foods to be served at parties in celebration of Valentine’s Day.
The family recipe box is being used this week to offer several ideas for entertaining loved ones.

Fruit Dip
5 egg yolks
1/2 cup white sugar
1 cup whipping cream
2 tbsps. Grand Marnier, Amaretto or orange juice
Beat together the egg yolks, sugar and 1/2 cup of the whipping cream. Pour into the top of a double boiler and beat while cooking, until thick.
Remove from heat and add Grand Marnier, Amaretto or orange juice. Mix in. Place custard in a bowl and cover with plastic wrap until cold.
In a cold, small bowl, whip remaining cream until stiff. Fold whipped cream into cold custard.
Serve as a dip with fresh fruits or serve over a fruit salad. Makes 1 1/2 cups.

Spicy Seafood Dip
1 cup mayonnaise
1/2 tsp. dry mustard
1/2 tsp. Tabasco sauce
1 garlic clove, grated
2 tbsps. vinegar
3 hard-boiled eggs, finely chopped
1/4 cup finely chopped olives
1 tbsp. parsley
1/2 medium onion, finely chopped
Combine ingredients and mix well. Serve with chunks of lobster, shrimp or other seafood or with nacho chips. Makes about 2 cups.

Salmon Mold
2 tbsps. plain gelatin (2 envelopes)
1/2 cup cold water
1 cup hot chicken broth
1 cup mayonnaise
3 tbsps. chili sauce
2 tbsps. lemon juice
2 tbsps. grated onion
1/2 tsp. Worcestershire sauce
1-8 oz. can salmon, bones removed
1/ cup diced celery
1/2 cup sliced stuffed olives
Dissolve gelatin in cold water then add mixture to hot chicken broth. Add remaining ingredients, with salmon, celery and olives added last. Mix.
Pour into a mold and chill overnight. Serve on assorted crackers or on dark rye bread. Serves 10-12.

Upside Down Cake
1/3 cup butter or margarine
1/2 cup brown sugar
19 oz. can peaches or pineapple, drained
2 eggs
2/3 cup sugar
6 tbsps. milk
1 cup flour
3 tsps. baking powder
1/4 tsp. salt
In an 8 inch square pan, melt butter or margarine. Sprinkle with brown sugar.
Arrange peach halves or pineapple slices on butter/sugar mixture.
Beat eggs and sugar and add milk. Combine dry ingredients.
Add flour mixture to egg mixture, mixing well. Spread over fruit and bake at 350 degrees F for 45 minutes.
Serve with whipped cream or ice cream. Makes 6-8 slices.
